Spicy Vegetable Rice....




Do you love spicy rice? If yes, then you will love this simple recipe of vegetables and rice. My siblings loved it so much that they ate more even though they were full. This can be taken for lunch or supper.

Ingredients

11/2 cups of uncooked rice
1 cup of water
2 tsp olive oil
1 large onion (diced)
1 large carrot (diced)
1 large green pepper
1/2 cup chopped green beans
1 cup chopped spring onion stalks
1 tbsp red pepper (powder)
2 tbsp soy sauce
1/3 cup green peas
1 Maggi Cube (small)
2 tsp of adobo all purpose seasoning (white)

Directions
1. Boil the rice (with a little salt) and pour onto a tray to cool and dry.
2. Heat oil in a wok or pan. Add half of diced onions. Toss till you smell the fried onions but don't let it  brown.
3. Then add the carrots, green beans, spring onion stalks and green pepper. Add soy sauce, red pepper and 4. adobo and stir for 2 minutes.
5. Add cooked rice and stir till the mix is of a uniform colour.
6. Warm peas in the microwave and add to the rice. Stir for 2 minutes and serve.

This meal can be eaten alone or with tomato sauce/stew.




Gosh! Been ages since I last posted a recipe. I feel so guilty..... Forgive me guys and gals. Anyways, I hope you love chicken cos with this kinda weather, the only thing that won't have me sweating in the kitchen is chicken salad.

Now there are many variations to this recipe but, since I'm kinda a health freak, the healthiest recipe was taken and modified.

Ingredients
1 head of lettuce
2 cups shredded cabbage
1 cup cubed grilled/steamed chicken
1/4 cup sliced green onions

For the dressing
2tsp of olive oil
1tsp of white vinegar
1/8 teaspoon of red pepper
Seasoning (optional)
Salt to taste

Directions
Tear lettuce in large salad bowl; add onions and cabbage. Add chicken, mix well. Put dressing ingredients in a jar and shake well. Pour over salad, toss lightly and voila! salad is ready.

I like to put in the fridge for 20 minutes so i can enjoy it cold. Hope you enjoy it too..


Okay. So I love experimenting with food a lot... Thank God it usually turns out edible; even when things go wrong. Lol!

Today I decided to add another banana based recipe. Even if you do not love the sweetness this fruit offers on its own, I can assure you that you will be far from dissapointed when you try this smoothie with some crushed ice cubes. Trust me, I know.

Smoothies are easy to prepare since all you need are the fruits, some liquid and a blender.

So why don't you try this at home and see if you wouldn't love it.

Ingredients


2 bananas

1 cup milk

1/4 cup water

2 tablespoons brown sugar (optional)

5 cubes ice

Directions

1. In a blender combine bananas and milk.
2. Pulse until bananas are chopped.
3. Pour in water and brown sugar.
4. Blend until smooth.
5. Toss in the ice cubes and blend until smooth.
6. Pour into 4 glasses and serve immediately.
 
You could also crush the ice  and add it to the smoothie after. It gives a great feeling when you feel the little pieces of ice melt in your mouth. Mmmmmm.... yummy!
